Chicken Club-Wich…

A keto friendly way to enjoy a Chicken Club Sandwich without the unwanted carbs.

Using romaine lettuce as the “bun”. You can use a keto friendly bun with this recipe as well. I recommend using this version for keto beginners. During the beginning stage of keto, it’s best to stay within your daily macros and fuel your body into ketosis.

Each Chicken Club-Wich is 5.0 carbohydrates.

Ingredients:

· Chicken Breast.

· Sliced Red Onions.

· Romaine Lettuce.

· Sliced Avocado.

· Swiss Cheese or Pepper Jack Cheese.

· Bacon.

· Olive Oil.

· Seasonings (salt, pepper, and garlic powder).

· 3 tbsp Sriracha

· Mayo

· 1tbsp lemon juice.



 
Instructions:

Chicken: Place the chicken breast between parchment paper and use a mallet to pound the chicken breast evenly. Drizzle the Chicken with olive oil and season with salt, pepper and garlic powder.

In a med/high preheated cast iron grill skillet, drizzle olive oil and place the chicken breast onto the skillet. Cook the chicken breast 3-4 minutes on each side. Allow the chicken to rest for 3 minutes.

Sauce: In a bowl add 1 cup of mayo, 3 tbsp of sriracha, 1tbsp lemon juice, a pinch of salt, garlic powder. Whisk ingredients together and set aside.

Assemble: You can make it a double or single stacker!

1. 1 Romaine Lettuce Leaf.

2. Grilled Chicken Breast.

3. Pepper Jack Cheese.

4. Sliced Tomatoes.

5. Sliced Avocados.

6. Sliced Red Onions.

7. Bacon Strips.

8. Sriracha Mayo.

9. Top with a romaine lettuce leaf.

10. Repeat assembly for the ultimate Chicken Club-Wich Double Stacker!

It’s best to wrap in parchment paper to keep the ingredients together!
